Three Generations, One Oven

In 1978, Stavros Papadopoulos opened a bakery in Plaka with two tables, one wood-fired oven, and a recipe for sourdough his own father had carried from a village in the Peloponnese. He called it "the new bakery" — o neos fournos. The name stuck, and so did the bread.

1978 – The two-table bakery

Plaka in the late seventies was waking up to tourism, but Stavros wasn't baking for tourists. He baked for the old town — for the fishermen of Monastiraki market, the shopkeepers, the grandmothers who could tell the difference between oven spring and oven rush. His bread took thirty-six hours to make, and that was that.

1994 – The move to Ermou

Stavros's son Nikos took over and moved the bakery to the corner of Ermou Street, where the old town meets the market. He kept the oven, the recipe, and the four o'clock fire — and added the morning croissants that now draw a line out the door by eight.

Today – The third generation

Eleni, the third generation, runs the bakery today. She studied in Lyon, baked in Copenhagen, and came home convinced of one thing: everything the world was calling "new" about bread, her grandfather had been doing since 1978. Slow fermentation, honest flour, patient hands.

The oven is the same one Stavros lit in 1978. It has outlived two renovations, one economic crisis, and a great deal of doubt. Every morning at four, someone in the family lights it again.

Milestones

  • 1978

    Stavros Papadopoulos opens a two-table bakery in Plaka with a wood-fired oven and his father's sourdough recipe.

  • 1994

    His son Nikos moves the bakery to the corner of Ermou Street and adds the morning croissants that Athens still queues for.

  • 2011

    Eleni, the third generation, returns from Lyon and Copenhagen to take the bench — and keeps everything her grandfather taught her.

  • 2026

    Nearly fifty years on, the same oven still lights at four every morning. Baked at dawn, gone by noon.
